In this class we will explore one of my all-time favorite cuisines…Italian! But, what a massive body of cuisine to explore! Where to even begin? Well, we will take a look at Italian cuisine from its roots in a very regional way. How about Bagna Couda from the Piedmont Region? Then we will gather in Lombardy and explore some approaches to one of my favorite rice dishes, Risotto. We will cut a little fresh pasta and play with a couple of sauce variations derived from several Italian regions. You seriously don’t want to miss this class!
